[flour free and sugar free] 3/4 Cup almonds, mine are raw, totally organic from Bremner Farms, CA 3/4 Cup sunflower seeds, organic. Combine any %'s of any nuts you choose! I grind in my Cuisinart until flour-like. Add the following and blend some more: 1 Tablespoon Arrowroot powder 1/2 teaspoon baking soda # shakes to taste of a sea salt
keep it simple or add Optionals according to taste-buds' desires at the time:
1 t ~ 1 T chia seeds, organic, may be ground first 1 t ~ 1 T flax seeds, organic, must grind first for nutrition 1 t ~ 1 T Brewers' Yeast, flakes or powder 1 t ~ 1 T maca root powder, raw organic several shakes of spices such as cinnamon, nutmeg, cloves, cardamom, allspice...
Then add the following wet ingredients and process until thoroughly combined and smooth: means blend, scrape bottom edges where dry ingredients can get stuck! ....blend ....repeat
3 large eggs, free-range, organic 1 Tablespoon Vanilla extract, organic 1/4 to 1/3 to 1/2 Cup combined liquids: [such as nut/rice milks, warmed nut butters, coconut milk, oils, vinegars [like coconut or apple cider], water, or dairy yogurts; use larger amounts based on amounts of optional dry ingredients added. [yes, some people would use agave syrup or honeys here!]
I work with pretty thick batter; thin to your preference; it will thicken and rise. Final ingredient option is to gently fold in fresh huckleberries and/or EurekaSally Chocolate Elixir nuggets [order on Chocolate page tab]
Get grapeseed oil hot on griddle over medium-high heat. Ladle out batter to preferred depth and diameter pancakes; expect swelling. Cook until bubbles appear and begin to pop, then flip and fully cook. Good to re-oil pan between batches. Made about 15, 3.5"diameter, using 1/8 cup scoop.
Toppings to offer: shredded apple is a favourite [or applesauce]; assorted berries; EurekaSally Chocolate Elixir nuggets; spices; honeys.
Dairy options: shredded cheddar cheese; brie; butter; plain yogurts. More options: you tell me! ok: sliced avocado!
Have Fun, Yum!It can be said these pancakes are a healthy high protein way to start a day, and just as fun to devour later on. Easily kept sugar-free & gluten-free & dairy-free & please keep soy-free.
Controlled by your optional choices of course, yet should cause no blood sugar spike and still provide interestingly sweet flavors. They freeze well and reheat or not.
May also be served with turkey bacon and sunny-side up eggs :-)
Apple Pie [EurekaSally's version] ~ my simplest concoction; most requested
If you are interested in a healthy but still sweet break from tradition, try this. The novelties here are that it is flour-free, sugar-free, replacement sweetners-free, not baked, and gooey to serve!
Devourers from all walks of life declare it Absolutely Delicious & I love my sliver to be topped with creamy plain yogurt.

crust: 1 heaping cup pitted dates ---sliced once helps, medjool or deglet [Get The Pits & End Bits Out ~ your blender knives will thank you] 1 heaping cup walnuts
My method: put dates in cuisinart, turn on and add walnuts slowly thru the feed tube. I do not put walnuts in first because they turn into walnut oil. Let it run until granular and it starts sticking to itself; tests done if sticks together when pinched.
Turn out into 9" pie pan and push into shape... pushing it around thru a deli/saran sheet works well & a rounded cup can be used for smoothing. Pinch rim into nice shape keeping below pan edge. Save in refrig.
insides: [I kinda hate to give amounts as I make several at once and don't mind left overs to save or snack, so it is estimate and preferences] Just over 1 pound seems to = 3 large golden delicious apples 1/4 to 1/3 cup lemon juice 1/3 to 1 cup raisins to taste 1 t to 1 T cinnamon to taste [probably more for me because I do not measure ~ I shake until each slice is coated!]
My method: first peel, then quarter, then trim out seeds, and slice into many thin slices; mix with or dip each slice in lemon juice to cover all sides & have in large bowl; toss gently while shaking cinnamon to coat; mix in raisins [fewer for me]; cover. Save in refrig.
combining: The crust settles and firms and the apples/raisins soak up the lemon juice and cinnamon when each mixture is refrigerated separately overnight; then putting apple mixture into crust works better than other way around!
Ha ha ~ but here I go some more & now I think this could be a good Apple Crumble recipe, and could even be heated.
Then I freeze them, and it seems that once thawed many folks think it was actually cooked first. Seems to keep forever just fine and refreezes also. This will probably never be an option for big-slice pie eaters, only the sliver-preferers like me.
FYI: when these are in my freezer, they are a good bet for showing up when I am invited to a pot luck : -)
